I think they were referring to the amazing defensive "head blocks" of the players and the goalie dives and saves. Watch them some time. If motion can sing, dance, and amaze, they do, just as the best poetry does intellectually.
True, some poetry is definitely not elegant, but you are now changing your argument or observation. All sports, then, can be (the ones you mention only rarely) poetry in motion. It's the surprise, the unimaginable (heretofore) expression and power of skill, the insight into new possibility, the rhythm and symmetry of movement all bound together that make some moments in sports poetry in motion. Just like all so-called poems are not poems, all moments in sports are not poetry.

But then all "sports" can be elegant : snooker/billiards, tennis, basketball and diving. Elegance is not poetry.
