The civet eats the coffee berries
which soften in its gut and are excreted whole.
They are collected and roasted.
They have a subtle under-taste of cherries.
The Javanese used civets this way in the 18th century
because they were forbidden by the very mean,
very nasty Dutch from entering the coffee-plantations.
Civets think the berries are delicious.
It was hard to prevent The Thieving Natives
from scooping up their droppings.
