Celeriac, boiled for an hour and a half, then diced, peeled, of course, then doused in dressing or mayonnaise, is food for the gods. What is thinkable? A peeling? There are thoughts and there are feelings, but, yours, Auban, are not cast-offs to get to the core.

It also makes a good soup with red lentils or beans, and can be eaten raw...
